Crockpot: Taco Soup
This is one of the best Taco Soup recipes I have come across. Loved by the whole family!

Servings 5
- 2 Large Chicken Breasts
- 1 16oz. Jar of Salsa
- 1 Taco Seasoning Pack (reduced sodium)
- 1 cup Chicken Broth (reduced sodium)
- 1 15oz. Can of Black Beans * I drain and rinse mine
- 1 heaping cup Frozen Corn * I used 1 1/2 cups
- Optional toppings: Cheddar Cheese, Cilantro
Place chicken breast in bottom of crockpot.
Add salsa, taco seasoning, chicken broth, and black beans in crockpot and stir well to combine.
Cook on high for 2-3 hours or low for 5-6 hours.
20-30 minutes before serving, add corn and stir. Replace lid and continue cooking for 20-30 more minutes.
Top with shredded cheese. Goes well with cornbread muffins.
If using thin chicken breasts, cooking time may be less.
