Easy Crockpot Meals: Chicken Edition

Lately, we have been really busy. Between home DIY projects and running the kids everywhere for after school activities, it has been tough around dinner time. I have been incorporating more crockpot meals into my meal plan and these are top winners for my family.

Crockpot: Pesto and Ranch Chicken Thighs

This yummy easy crockpot meal is a winner for Pesto and Ranch Lovers

Equipment

Ingredients

  • 8-10 Boneless Skinless Chicken Thighs
  • 1 Package Ranch Dressing Seasoning Mix
  • 6 oz. Jar of Pesto
  • 1/2 cup Low Sodium Chicken Broth

Instructions

  • Place chicken thighs in bottom of crockpot.
  • In a separate bowl, combine ranch seasoning mix, pesto, and chicken broth and mix until smooth and well incorporated.
  • Pour mixture over chicken thighs and stir chicken mixture.
  • Cover crockpot with lid and cook on high for 3-4 hours or on low for 6-8 hours.
  • Goes well with baked sweet potato or mashed potatoes, and roast asparagus.

This Honey Garlic Chicken is sure to hit the spot. An easy meal the whole family will love!

Equipment

Ingredients

  • 6 Chicken Breast
  • 4 Cloves Garlic, Minced
  • 1/3 cup Honey or Blue Agave
  • 1/2 cup Soy Sauce (low sodium)
  • 1/2 cup Ketchup
  • 1/2 tsp Dried Oregano * I use a little more.
  • 2 tbsp Fresh Parsley * If using dried, cut in half.
  • Optional Topping: Sesame Seeds

Instructions

  • Place chicken breasts in the bottom of crockpot.
  • In a separate bowl, combine garlic, honey, ketchup, soy sauce, oregano, and parsley. Mix together with a whisk.
  • Pour sauce over chicken and cover crockpot with lid.
  • Cook on high 3-4 hours or low for 4-5 hours.
  • Serve over rice and pairs well with broccoli. Sprinkle (optional) sesame seeds on top.

Notes

If using thin chicken breasts, cooking time may be less.

Last but not least is this tried and true Taco Soup. Who doesn’t love a good Taco Soup recipe. This one is by far my favorite and I cannot wait for you to try it. We topped it with shredded cheese and I made cornbread muffins to go with it.

Crockpot: Taco Soup

This is one of the best Taco Soup recipes I have come across. Loved by the whole family!

Equipment

  • Crockpot

Ingredients

  • 2 Large Chicken Breasts
  • 1 16oz. Jar of Salsa
  • 1 Taco Seasoning Pack (reduced sodium)
  • 1 cup Chicken Broth (reduced sodium)
  • 1 15oz. Can of Black Beans * I drain and rinse mine
  • 1 heaping cup Frozen Corn * I used 1 1/2 cups
  • Optional toppings: Cheddar Cheese, Cilantro

Instructions

  • Place chicken breast in bottom of crockpot.
  • Add salsa, taco seasoning, chicken broth, and black beans in crockpot and stir well to combine.
  • Cook on high for 2-3 hours or low for 5-6 hours.
  • 20-30 minutes before serving, add corn and stir. Replace lid and continue cooking for 20-30 more minutes.
  • Top with shredded cheese. Goes well with cornbread muffins.

Notes

If using thin chicken breasts, cooking time may be less.
