Hamburger Soup

It has been raining A LOT here lately, which makes my grass very happy.  Myself on the other hand, can think of only one thing when it rains……  SOUP!

Not exactly sure why it is I do this.  Maybe because that is what my mom used to do or maybe because I just want it.

Either way, I’m fixing it!  Here is a great recipe, that happens to be kid approved.

My kids like to call it Hamburger Soup, which is basically a glorified way of saying vegetable soup with ground beef.

You basically just throw a bunch of stuff into a pot and let it simmer.  Wait!  I guess that is what you generally do with soup.  Oh well.

Here is what I used.  I buy my meats in bulk mostly and then divide them into freezer bags, so disregard the undesirable package of raw ground beef in the background.

 

Start by browning 2.5 to 3 lbs of beef.

I know it sounds like an odd amount of meat seeing as most packages come in 1 lb amounts.  This is going to make a nice size pot of soup.  You will definitely have leftovers.

 

 Peel and dice up 3 large potatoes.

Chop up the onion and saute in a couple of tablespoons extra virgin olive oil and about a tablespoon of butter until translucent.

Add a little onion powder.

Tomato Sauce and diced tomatoes.

 

 

Some beef broth.

Now add the mixed vegetables and I also add butter beans since the mixed veggie bag doesnt have those.  We just happen to love them in our house.

Now add the potatoes….  ALMOST THERE!

 Now just stir and let it simmer until all the vegetables are tender and the flavors marry.  If you want, make this ahead of time.  It’s like chili.  The longer it sits, the better it is.

RECIPE:  Hamburger Soup

Ingredients:

2.5 – 3 lbs. ground beef

3 large russet potatoes, peeled and cut into cubes

4 (14oz) cans  or 2 (24oz) cans  diced tomatoes

2 (14oz) cans or 1 (24oz) can of tomato sauce

1 (14oz) can beef broth

1 bag of fozen mixed vegetables

1 cup frozen butter beans

1 large onion, diced

2 tablespoon olive oil

1 talblespoon butter

1 tablespoon onion powder

1/2 tablespoon garlic powder

salt and pepper to taste

Directions:

In a large pot, brown beef.  Drain off fat and set aside.

In the same pot, saute onion in olive oil and butter until translucent.

Add beef back to onion.

Add remaining ingredients to pot and cook until all vegetables are tender, about 25 minutes.

(*Note:  If soup is too thick for your taste, simply add a little water and it should do the trick)

Serve with crackers or biscuits.
